Easy Shrimp and Avocado Summer Salad

Who wants to even think about cooking when the weather is hot and even the house is hot despite the air conditioning? Not me! I love a nice high protein salad on days like that and this one is not only super quick and easy, it's also healthy and delicious!

1lb-2lb cooked shrimp
15 cherry tomatoes, halved
2 bell peppers, chopped
2 small avocados, cubed
Big bunch of cilantro, chopped
Dressing
1/2 cup plain Greek yogurt
2 tsp Apple cider vinegar
garlic powder
salt and pepper
lime juice to taste
If you want a non dairy dressing I have also made this salad with this dressing
2 limes, juiced
1-2 tsp olive oil
salt and pepper
Mix up the dressing ingredients and then mix the dressing with the salad and place over a bed of butter lettuce or romaine and you are done! You can add roasted corn to the salad too for some extra crunch.
