Cilantro Lime Fajita Salad

Another one of my very favorite protein packed summer dinners is this amazing cilantro lime fajita salad. It's quite easy to make and the flavours are amazing.
Salad:
4 boneless skinless chicken breasts (cut into strips)
1 large yellow pepper (seeds removed, but into strips)
1 large orange pepper (seeds removed, but into strips)
2-3 heads of romaine lettuce (cut into bite sized pieces)
1 avocado (sliced)
1 cup cherry tomatoes (halved)
Marinade:
1/2 cup cilantro
2 limes juiced
2 tsp sea salt
2 cloves garlic
1 tsp cumin
1 tsp chili powder
1/4 cup olive oil
Place ingredients in food processor or blender and blend until garlic is finely chopped. Poor marinade into a bowl or Ziploc bag and add chicken. Refrigerate.
Dressing:
2 limes (juiced)
2/3 cup cilantro
2 cloves garlic
2 tbl honey
1/4-1/2 cup light olive oil
2 tbl white vinegar
1 tsp sea salt
Place all ingredients in a food processor or blender and blend until garlic is well chopped and ingredients have emulsified.
You start off by marinating the chicken breasts in the fridge for a few hours. Make the dressing at this time and place that in the fridge as well. After it marinades for a few hours, you can grill or pan fry the chicken on the stove.

Once your chicken is cooked you can construct the salad while it cools off. Chop all your veggies and place in a large bowl.

Top the salad off with the cooked chicken and then drizzle the dressing over the salad. Toss well and you have a quick and delicious, healthy salad for dinner!
